Peas and Mint combine perfectly to give a clean fresh taste in this easy to make pea and mint risotto recipe.

You may have heard how difficult risottos are to make…..not this one. Here you add all the stock to the rice and only stir as required.  It may not be the “perfect” risotto but it tastes delicious, is nutritious and so easy to make.

By stirring risotto recipes the rice is broken up and the starch released to create a more creamy consistency. At the end of this recipe give the rice a good stiff stir and you will create the required consistency.

Using frozen peas means you can make this risotto all year round.

Grow mint in your own garden or kitchen as its so easy to do. Mint grows like a weed so be careful it does not take over!

Ingredients
  • 2 cups vegetable stock
  • 1 1/2 cups frozen peas
  • 1 tbsp natural yoghurt
  • 2 tbsp fresh mint, chopped
  • 1/2 cup Arborio Rice
  • 2 tbsp Parmesan cheese, grated
Instructions
  1. Bring the stock to a boil in a pan. Cook peas for a couple of minutes in stock and remove with a slotted spoon.
  2. Add the rice to the stock and cook until soft. Stirring as required to prevent rice sticking.
  3. Meanwhile blend 1 cup of the cooked peas with the yoghurt and mint to make a puree.
  4. When the rice is cooked, all the liquid absorbed, stir through the peas and pea puree and the parmesan cheese.
  5. Serve with some more parmesan grated on the top.
